Why is it that, to keep my chips from getting stale, I try to get all of the air out of the bag, but when I buy a bag of chips it comes full of air?
I get that the air is put in there for protection and that it is a “dry” factory air. Or so they say. So really what you must shield your chips from is humidity. That being the case, if you live in, say, Arizona, can you leave chips sitting out in a bowl on the counter? Will they stay fresh?

I find myself wondering if it’s really actually air at all and not some other gas…. Good questions, though!
